How to Make Your Own Pasta

Making your own pasta is easy and the results are delicious. This recipe makes about 500g of pasta. Use 00 flour (available from most supermarkets) if you can get it. If you can't, don't worry, plain flour will work perfectly well.

We used the Imperia SP150 Pasta Machine with the Tagliatelle Cutter.

Ingredients

  • 300g pasta flour
  • 2 large eggs
  • a little lukewarm water

    Method
    Put the flour on a worktop and make a hole in the middle for the eggs. Beat the eggs with a fork and gently mix in the flour until the mixture forms a smooth dough. Knead the pasta with the palm of your hand on a floured work surface. If the pasta is too dry or crumbly, add a little lukewarm water. When a smooth, silky texture has been reached, form a ball and leave to rest for 20 minutes in a covered bowl.

    Pass the dough several times through the rollers of the pasta machine to make a thin sheet of pasta, each time folding the sheet in two and sprinkling with flour. After rolling 6-8 times the dough should be soft and elastic. If it is too sticky, sprinkle lightly with flour. Then, reduce the space between the rollers, turning the adjustment knob one notch and pass the pasta through the rollers again.

    Continue reducing the space between the rollers, one notch at a time, until the required thickness is reached. At any point, If the sheet is too long and difficult to handle, divide it in half. Leave the sheet to rest for 10 minutes before cutting. Finally, pass the pasta sheet through the cutters to make the pasta of your choice. The pasta can be used straight away or dried or frozen for future use. To dry, hang the strands over a drying rack and store in an airtight container.
